Potato Soup

6 potatoes
1/4 cup margarine (smart balance)
1/2 cup 1% milk
8 oz low fat sour cream
1/2 cup low-fat buttermilk
1 medium onion chopped
5 green onions chopped
bacos
salt
pepper
garlic powder

Boil potatoes and onion until they are firm but starting to become of mashing consistency. Add butter. Salt and pepper to taste.
Stir in the milk, sour cream and buttermilk in that order, stirring between each addition. Add green onions and bacon. Add garlic
powder to taste.
To Freeze: Freeze in freezer safe container.
To Reheat: Heat in microwave until hot and thick, stirring every minute or so.

Pretty good, but make sure you use the low-fat versions for the ingredients or it's too rich for me and doesn't settle well.

I did not boil the onion as the recipe indicated. I added the chopped onions when I added the milks and sour cream. This gave the soup texture, which I like. If you like less texture to your soups, make sure to follow the directions. Also, I used turkey bacon instead of bacos. Yummy! Also kept it low fat. I really like this soup - may be a new favorite soup for me!

Update 3/09: I really like the flavor, but too much onion for my liking. Maybe less onion and use the green onions only for garnish after reheating?
