3 cups water
1 cup dried red kidney beans
1 cup chopped onion
1 cup chopped green bell pepper
3/4 cup chopped celery
1 tsp dried thyme
1 tsp paprika
3/4 tsp ground red pepper
1/2 tsp black pepper
1/2 (14 oz) pkg turkey, pork and beef smoked sausage, thinly sliced (try Healthy Choice)
1 bay leaf
5 cloves garlic, minced
1/2 tsp salt
3 cups hot cooked long grain rice
1/4 cup chopped green onions

Combine first 12 ingredients in an electric slow cooker. Cover with lid; cook on high heat for 5 hours.
(You can also cook over low heat for 8 hours). Discard bay leaf; stir in salt.
To Freeze: Freeze in freezer safe container.
To Reheat: Reheat in covered pot, serve over rice, sprinkle with green onion.

The flavor was really good, but unfortunately much too spicy for me to eat.

Too spicy for all of us (except Liem). Has potential, but it was really bland, we thought. Not an offensive flavor...just no flavor. If we could figure out how to flavor it up, it could be good.
