Layered Italian Sandwich

1 round sourdough loaf
1/4 cup of sun-dried tomato pesto
6 slices low-fat ham
6 slices oven roasted turkey
6 slices turkey salami
3 slices provolone cheese
1/2 yellow pepper
1/2 red pepper

Cut the sourdough round in half. Hollow it out and brush each side with half of the sun-dried tomato pesto. Layer half of the meat on each side of the bread and top with cheese. Top with pepper slices.
To Freeze: Wrap in foil and freeze in freezer safe container.
To Reheat: Defrost completely. Serve cold or heat in the oven or BBQ to melt cheese.
**Makes two 1/2 loaves, each half serves 3, serves 6 total.

Yum, this was really good heated and different from a typical meat dish dinner. The tomato pesto adds a nice flavor.

Oooh yum! Trick with this one is to make sure you've let it defrost all the way before you broil or BBQ it to melt the cheese. We had to use the microwave to complete the defrosting of the center of the sandwich, but it was still excellent!
